They are super easy to make, filled with healthy ingredients and the perfect treat for the season. Honestly, you will be delighted at how delicious they are. Low in sugar and filled with fibers, they are simply the perfect indulgence for any occasion. You definitely have to try these Easy One-Bowl Chocolate Sweet Potato Brownies. 

Oh and did I mention they are also great for anyone with food allergies as they contain no gluten, no dairy, no soy, and use a healthy sweetener, low on the glycemic index.

Indeed, instead of using conventional sugar for this recipe (which is very detrimental for your health), I used coconut sugar. Coconut sugar is not only low on the glycemic index (which means that it won’t spike up your blood sugar levels), but it is also a great source of B vitamins, minerals and amino acids. This healthy sweetener alternative won’t deplete your body of precious nutrients like regular sugar does.

Of course, as with any sweetener, use it in moderation and with balance. That being said, this recipe used a very small amount so you don’t have to worry about it.

All right, now that you know more about coconut sugar, let’s get into this recipe, shall we?

Easy One-Bowl Chocolate Sweet Potato Brownies

Easy One-Bowl Chocolate Sweet Potato Brownies

Ingredients:

3 Tbsp of brown rice flour
2 Tbsp of raw cacao powder
1 Tbsp of cinnamon
2/3 tsp of baking powder
2.5 Tbsp of coconut sugar (if you need a little more sweetness, make it 3.5 Tbsp)
1 large sweet potato, baked and then mashed (remove the skin)
2 eggs, beaten (vegan substitution: 2 Tbsp of ground flax/chia seeds + 6 Tbsp of water)
pinch of sea salt
4 Tbsp of extra virgin coconut oil, melted

Optional toppings: a few chunks of dark chocolate (I used a sugar-free version, sweetened with stevia) and a few walnuts. Add whatever toppings you like.

Easy One-Bowl Chocolate Sweet Potato Brownies

How to:

Place all of the ingredients into your blender or food processor or large bowl and mix/blend until well combined.
Pour your mixture into an oiled (I used coconut oil) baking tray or loaf tin.
Bake for 25 to 30 minutes at 180/200 degrees C (400 degrees F, it depends on the oven) or until a toothpick comes out clean.
