I don’t know for you but one of my favourite breakfasts when it gets cold outside and especially at this time of the year is: pancakes. They are so comforting, fluffy and just seem like the perfect dish to enjoy throughout the Holiday season or cold winter months. The other day, I had some leftover baked sweet potato and I thought: “why not create a naturally sweet pancake batter with these?”. I added a few more ingredients and bam these: Healthy Glowing Green Pancakes were born. They are so tasty, naturally sweet and oh-so-fluffy. The perfect kind of pancakes, if you ask me.

And what I love even more about these pancakes is that they are filled with nutrient-dense ingredients such as sweet potato, coconut oil, turmeric and brown rice flour.

These healthy glowing green pancakes won’t leave you bloated nor put you on a sugar craving roller-coaster! I am pretty sure that they will quickly become a staple in your house too!

Oh and if you’re wondering: “Why are they green?”

Well, I simply added some spirulina powder to create a fun and different colour. Spirulina is a blue-green algae that is also an amazing superfood. It is rich in minerals, B vitaminsproteins, and antioxidants. It can help boost your energy levels, lower your blood pressure, and even help prevent cancer. Given all of these health benefits, it seemed like the perfect healthy addition to these pancakes.

Don’t worry you won’t taste it in the pancakes, at all.

All right, now that you know why these glowing green pancakes are healthy for you, let’s jump straight into the recipe, shall we?

Healthy Glowing Green Pancakes

Ingredients:

(Makes about 14 mini-pancakes)

  • 1/3 cup brown rice flour
  • 2 tsp baking powder
  • 1 Tbsp cinnamon
  • 1 tsp of spirulina
  • 1/4 tsp turmeric
  • 1 Tbsp coconut sugar (optional)
  • 2 eggs (or 2 “flax” eggs)
  • 1/3 cup plant-based milk (I like coconut or almond milk but choose your favourite)
  • 1 Tbsp extra virgin coconut oil
  • 1 cup sweet potato baked or roasted (or purée)
  • 1/2 tsp vanilla

How to:

Place all of the ingredients into a food processor or high speed blender & mix well until you have a smooth batter. Alternatively, you can also just use a whisk and a bowl (traditional-style) ;).

Warm up a frying pan, add a bit of coconut oil, and start pouring some pancake batter according to the size of pancakes that you want. Let your pancake cook for about 2 to 3 minutes, before flipping it and cooking the other side. Once they are all ready, it’s time for the fun part… The toppings!

Toppings: feel free to add your favourite kinds. I love these with some nuts, seeds, coconut flakes and some coconut butter or homemade berries compote on top. Deee-li-cious!
