Since the beginning of this quarantine (25 days ago when I write this), I have been feeling very creative in the kitchen; testing out new recipes, exploring new tastes and baking a lot. So naturally, when I end up with something delicious and tasty, such as these Chocolate Cookie Dough Bites, you know I had to make sure the recipe lives on out here on the blog ;).

Now, what I love the most with these Chocolate Cookie Dough Bites is that they are very easy to re-create and contain quite a few nutrients-dense ingredients, such as some oats (hello, fibers), cashew butter (i.e. protein and healthy fats) and a healthy dose of natural sweetener in the form of maple syrup. Due to its ingredients, you’ll see that they make for a very satisfying and wholesome treat. Trust me, you’re gonna looove  these chocolate balls ;).

Without further ado, let’s jump straight into the recipe. Here is what you’ll need to make these:

Chocolate Cookie Dough Bites

Ingredients:

  • 1 cup of oat flour (simply blitz some rolled oats into a blender if you don’t have the ready-made flour)
  • 1 Tbsp of melted coconut oil
  • 1/4 cup of cashew butter (or almond butter would work great too)
  • 2-3 Tbsp of maple syrup
  • 1 tsp of vanilla bean paste (or vanilla extract)
  • dash of cinnamon
  • sprinkle of sea salt
  • For the chocolate coating: 1/2 cup of dark chocolate chips (or chocolate bar) + 1-2 Tbsp of coconut oil

Yield: about 12 bites.

How To:

Simply add all of the ingredients (except the chocolate) to your food processor and blend on high for a few minutes until you have reached a dough-like consistency. Once your dough is ready, set it aside.

Now, create the chocolate coating by adding your chocolate chips and coconut oil to a bowl. Melt away the mixture using the “bain-marie” technique (aka: double boiler). Once your chocolate mixture is fully melted and well combined. Set it aside.

Now the fun part… Create mini balls with your hands and then cover them with the chocolate mixture. Place each chocolate cookie dough bite onto a parchment paper-covered tray. Once you are finished, place your tray into the fridge or freezer and let the bites solidify.

They will keep well into the fridge in a air-tight container for a few days (if you can make them last this long :p). In my home, these were gone in about 3-4 days- they are just that good!
