For those cold winter nights, nothing screams comfort more than a nice and warm bowl of soup. I don’t know for you but during the colder winter months, I simply LOVE using root vegetables in my meals. This recipe is no exception. It is filled with warming spices and super yummy vegetables. It is quick and easy. This Comforting Lentils & Sweet Potatoes Soup will quickly become a favourite and staple in your home too.

Comforting Lentils & Sweet Potatoes Soup:

Ingredients:

  • 1/4 cup coconut oil (or extra virgin olive oil)
  • 1 medium onion, diced
  • 2 tomatoes, diced
  • 1 tsp minced fresh ginger
  • 1 &1/2 tsp turmeric
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1/2 to 1 tsp ground cinnamon
  • 1/8 tsp cayenne
  • 2-3 medium sweet potatoes, peeled (if non organic) and cut into cubes
  • 2-4 carrots, cut into pieces
  • 1-2 stalks of celery, cut into small pieces
  • 7 cups vegetable broth
  • 1 cup brown or red lentil
  • Some sea salt (to taste)

How to:

Heat up the oil over medium fire in a large and deep pot. Add the onion and cook, stirring frequently for 2 min, or until onion starts to soften. Stir in the tomatoes and ginger and cook for 3 min. Add in the spices and a pinch of salt. Cook and stir for 2 min.
Add the sweet potatoes, broth, and lentils. Stir well, and bring to a boil over high heat. When the mixture comes to a boil, reduce the heat, cover, and simmer for 40 min or until the lentils and sweet potatoes are soft. As an option: feel free to purée (blend) some of the sweet potatoes and lentils for a smoother and creamier result.

This soup is delicious on its own or with some toasted sourdough bread or brown rice.
