Did you know that salads can be just as good in the winter? That’s right! Especially if you add the right kinds of ingredients to make them warming and comforting. One thing that truly helps is including more cooked foods into your winter salads. This Roasted Sweet Potato Quinoa Salad is definitely a staple in my house when the temperatures start to drop. It is filled with nutrient-dense foods and it is super easy to prepare as well. Try it out and let me know your thoughts! 

You will see that it is very easy to recreate this recipe at home. It only requires a few ingredients and you can easily modify it by adding a few more of your favourite staples or different veggies, such as winter squash or pumpkin, for example.

Here is what you will need for this:

Roasted Sweet Potato Quinoa Salad

 

Ingredients:

1 cup of cooked quinoa
1 cup of roasted sweet potatoes
1 cup of sautéd spinach (with olive oil + sea salt)
1/2 cup of slivered almonds, and/or crushed walnuts or sunflower seeds (Optional: grill them for extra flavour)
Sea salt & pepper to taste
Optional: 1-2 Tbsp of crumbled goat cheese OR 1 avocado, diced.

Vinaigrette:

3 Tbsp of extra virgin olive oil
1.5 Tbsp of fresh lemon juice
1 tsp of dried Herbs de Provence or oregano or thyme
Sea salt + pepper to taste.

How To:

Start by cooking your quinoa and roasting your sweet potatoes. Set them aside.

Then proceed with sautéing your spinach into a bit of coconut oil and some garlic (about 1 clove).  At this stage you can prepare your salad dressing by mixing all of the vinaigrette ingredients together.

Now place all of the salad ingredients into a bowl, add your nuts, seeds, avocado or got cheese. Pour the salad dressing and enjoy!
